Dr. Knight's Chocolate Almond Swirl

Tasty, delicious, and smooth. A homemade treat that tastes amazing and won't set you back on your wellness journey.



Ingredients:


  • 1/2 cup almond butter (cashew butter works too!)

  • 1 can full-fat coconut milk

  • 1/4 cup honey or maple syrup

  • 1 ripe avocado

  • 1 ripe banana

  • 2 Tbs unsweetened cocoa powder

  • 1 tsp vanilla

  • 1/4 tsp salt


 

Directions:


Cover an 8x8" baking pan with wax paper. Use 1/4 cup of the almond butter to drop 1 tsp spoonfuls on the waxed paper. Put them in the freezer to harden.


Add all ice cream ingredients in the order listed to the container of a high-powered blender (like a Nutribullet or Ninja)


Blend for 30-60 seconds or until the mixtures is smooth.


Turn the ice cream maker on and pour the mixture into the machine while it is spinning.*


Let the ice cream churn for 20-25 minutes until it becomes a firm ball or the ice cream maker stops rotating.


Add the almond butter chunks at the end of churning. You can add them to the ice cream maker just before the mixture becomes too hard, or you can mix them in by hand.


Transfer to an airtight, freezer-friendly container and put in the freezer for at least 1 hour, or until completely frozen.


*If you do not have an ice cream maker, you can simply freeze the blended mixture. It will just freeze to a very hard consistency so you will have to set it out for 10-15 minutes before eating to soften.
